A good glass of wine: pure bliss

Wine is a journey. Wine flows. Wine is a liquid journey which flows through history, memory, and is a sparkling drop of discovery.

Wine is a movement through time and space which starts from the vineyard, flowing into the bottle and reaches its pinnacle when poured into a waiting glass. A meal or dinner can be a special occasion indeed, an experience to behold, when each dish is paired to a specific wine. That is why selecting a glass of wine, rather than a bottle, and following the advice of we who passionately study this age-old discipline with fervour, can be a fine alternative to just ordering a bottle. Of course we know the chef’s menu really well, and have fun in finding the right pairings, offering alternative solutions to the old classics, stimulating the guest in broadening horizons. A pleasure which results in spontaneous sharing, analysis, comment, evaluation. Drinking by the glass is an occasion to exchange ideas, of getting to know someone better and, why not, of having good fun. The Stüa de Michil offers two tasting menus: the Dolomite menu and the Italian menu. The former is linked to the province, and so the suggested wines adhere to the same criteria. Basically, South Tyrol is at the heart of the menu. And we move through a number of areas: Valle Isarco, Valdadige, Termeno, Laion, Venosta, Bassa Atesina. Lucky for us that all of the region’s wines are outstanding. Four courses for four glasses: Gewürztraminer, Blauburgunder, local Lagrein autoctono and a pink Moscato. A veritable journey to good drinking and eating in South Tyrol. The verve of chef Nicola, of half Ladin and half Apulian origin, in the Italian menu is bubbling with flavour. How not to enjoy his ideas would be a difficult task indeed? Once again, the four courses are paired with four wines which include a Lambrusco from Modena, a Pigato from Liguria, a beer which has matured in rum-infused barrels, and select spirits: brandy, cognac and chartreuse, just to mention some. A toast to creativity, sipping flavour, expertise, joy without a care in the world.
The tune changes at the Stues: guests can choose from one single glass of old classics such as Sassicaia, Tignanello, Barolo, Amarone, Pinot Nero di Borgogna, Bordeaux, Champagne, ending with the King of Desserts, the Château d'Yquem. Or they can discover true finds such as the Sylvaner or Merlot, not as well-known but extremely tempting nevertheless. We have put together a rather short but dynamic list, short when compared to our classical ‘Bible’ that is, with around 20 suggestions which change from time to time, and we include small producers and wines with a different flair, all suggestive and interesting.
